1 lb ground ground turkey or chicken, I use venison sausage 1 Medium spaghetti squash 2 cloves garlic, minced
1 cup canned corn, drained and rinsed
1 cup canned black beans, drained and rinsed 1/2 jar Salsa
Cheese and Cilantro (optional)
Preheat oven to 400 degrees.
Cut spaghetti squash in half, spoon out seeds, place cut side down on a cookie sheet in the oven, cook for 3-40 minutes. Let cool, then loosen 'spaghetti' with a fork.
While spaghetti is cooking , In a large, deep skillet, throw in onion and garlic with EVOO cooking until slightly brown.
Add meat or sausage, cook till no longer pink and cooked through. stir in the corn and beans. In the same pan stir in the salsa, and then add in the cooked spaghetti squash, mix until fully coated with salsa.
Scoop the veggie/turkey mixture into each squash boat and top with cheese(optional), place in the oven on low broil for 2 to 4 minutes. Top with cilantro or your favorite toppings.
