Healthy Nachos

Your body will thank you for these!


Head of Cauliflower 1/2 cup of Salsa 1/2 cup black beans-Low sodium (drained and rinsed) 1/2 red Onion, diced 1/2 half avocado, bite size pieces handful of grape tomatoes cut in half 1/2 cup of mixed cheese. I love adding what ever protein I have on hand to Top on this nachos. I've used left over turkey, chicken, and Ground turkey.


Take a head of Cauliflower and cut into 1/2 to 1/4 inch slices, cut into chip sizes. Put into bowl and drizzle EVOO, stir to coat. Put flat side down onto greased cookie sheet. Bake in oven at 450f for 15 mintues.

Pull out of oven and top with your favorite nacho topping. I used left over chicken and salsa, 1/2 cup black beans, 1/2 diced red onion, 1/2 half avocado and handful of grape tomatoes cut in half. I used about 1/2 cup of mixed cheese. Put back in oven and cook for another 8 to 10 minutes till cheese melts. Let sit for about 5 minutes and serve
