Double Chocolate Zucchini Muffins

Finally found a way to trick my six year old into eating veggies.


1 cup shredded zucchini 2 large eggs 1/3 cup unsweetened applesauce 1/4 cup maple syrup 1 cup Isagenix Isalean Protein powder 1 1/2 tsp baking powder 1/2 tsp baking soda 3 TBSP cocoa powder, unsweetened 1/2 cup mini dark chocolate chips 2 tsp vanilla extract Pinch sea salt


1. Preheat oven to 350 degrees, spray muffin tins with oil. 2. Squeeze some moisture out of zucchini, put into large mixing bowl with all the ingredients. 3. Mix till all combined. 4. Divide batter evenly into 12 muffin tins fill till about 3/4 full. 5. Bake for 20 minutes then let cool in pan for another 10 minutes. 6. Transfer to wire rake to cool. Store in airtight container in the Fridge. Enjoy!!
