Preheat oven to 400 degrees, grease a cookie sheet
2 Cups raw broccoli 1 Large egg 1/4 Cup diced onion 1/3 Cup Fat free cheddar 1/3 Cup of Panko breadcrumbs 1/3 Cup of Italian Breadcrumbs 2 Tbsp parsley, chopped 1 tsp Black Pepper
Blanch broccoli for a minute in boiling water. Drain and shock with cold water. Drain well. Chop broccoli till fine, mix in egg, onion, cheddar, breadcrumbs, parsley and pepper. Scoop about 1.5 Tbsp into hand and roll in ball and shape into tatar-tot shape. Put on cookie sheet and bake for 20 to 25 minutes. Flipping halfway through.
