Ingredients 3 egg whites

1 tablespoon Maple Syrup

1 tablespoon vanilla

Pinch salt

2 cups sweetened shredded coconut, packed

Directions Start by whisking together the egg whites, maple syrup and vanilla until foamy.

Next, add a pinch of salt and the 2 cups of sweetened shredded coconut. Combine until you have a stringy texture, let sit for 10 minutes.

Using a scoop or a couple of spoons, pop the mixture onto a parchment-lined baking tray.

You should have room for about 20 Macaroons.

Place in a 350 Degree Oven for 15 -18 minutes. Rotate your pan at 6 minutes and check after 15 minutes.

Remove from oven when they are toasty and golden.

Cool completely before peeling from parchment paper and enjoy!

• 1/2 cup olive oil • 1/4 cup white wine vinegar • 1 teaspoon chili powder • 1-pound Roma tomatoes seeded and diced • 1 (15 ounce) can black-eyed peas, drained and rinsed • 1 (15 ounce) can black beans, drained and rinsed • 1 (11 ounce) sweet corn, drained or Corn of the cob • 1 red onion diced • 1/2 cup diced green bell pepper • 1/2 cup diced red bell pepper • 1 cup chopped cilantro


*Chop all ingredients and put in a large bowl.

*Mix the Olive oil, white wine vinegar and the chili powder in a separate dish.

*Pour dressing over salad and toss till coated. This dish can be used as a dip, topping on protein or a side salad.
